Vegan Mexican Pizza Recipe
Ingredients
Cilantro yogurt mayo
- 60 mL soy yogurt, unsweetened
- 2 tablespoons (30 ml) mayonnaise that is vegan
- 2 tablespoons fresh cilantro
- 14 teaspoon salt
Pizza
- 3 crushed garlic cloves
- 120 g vegetarian ground beef
- 2 tablespoons Mexican-inspired spice blend
- 2nd (20 cm) pizza crusts that are pre-made
- 1 tablespoon olive oil
- 5 tablespoons (140 ml) tomato paste in a can
- 1 diced red bell pepper
- 1/2 medium thinly sliced red onion
- canned corn (55 g)
- a quarter cup (38 g) slices of pickled jalapeo
- 1 avocado, sliced 1 stalk green onion, sliced 10 cherry tomatoes, cut in half
- Heat the oil in a small saucepan over high heat. When the oil is hot, add the garlic and cook for 2 minutes, or until it is lightly golden.
- Then combine the vegan soy veggie ground, spice mix, and 1 tbsp water in a mixing bowl. Cook for an additional 2 minutes.
- Brush the tops of the pizza crusts lightly with olive oil, then spread with the tomato paste.
- Distribute the soy ground mixture evenly between the two pizzas, then top with the bell pepper, onion, corn, jalapeos, and cherry tomatoes.
- Bake for 12 - 15 minutes, or until the crust is lightly golden in the center of the oven.
- While the pizza is baking, prepare the cilantro sauce by combining all of the ingredients in a small bowl.
- When the pizza is finished, top it with dollops of yogurt sauce, sliced avocado, and sliced green onions. Enjoy!
